The smooth herb knife is made from leaf spring stock and has surface pitting and texture. Sharpness is maintained with a standard knife steel and it can be honed to razor sharpness if you like.
Use your mezzaluna on fresh or dried herbs, for chiffonades and small fruits. Wipe with oil before storing.
Since the knives are handmade, expect slight variations in the finished piece.
